David Gelb's vision is genius
This is what started Gelb's incredible vision into the world of chefs and their incomparable food around the globe. His Chef's Table series (Netflix) is just about the best that a documentary can get in that genre. Jiro's story is mesmerizing and the journey into the world of sushi, picking out the fish, preparing it to Jiro's standards and Jiro's passion for the craft is hard to equal unless it would be the with the chefs in his Netflix series. And to know that Jiro's dream is a legacy he'll leave for future generations to carry forward has got to make many people very happy. Pairing the film with a classical music score could not have been more fitting. Don't watch this movie if you're hungry
Jiro Ono is filmed as a stoic "defender of the faith" of top quality sushi. He certainly is a study in contrast being 85 and still working day and night. His restaurant is regarded as the finest sushi establishment in Japan and has been awarded a Three Michelin Star rating, yet it only seats 10. What I found most interesting wasn't the sushi, but the relationship with Jiro and his eldest son Yoshikazu, at 50, is still waiting to succeed his father. The younger son Takashi, has gone on to his own restaurant and making a name for himself. Filming the elder son waiting in the ranks provides insight to one of Japan's most traditional cultural norms... The eldest son's duty is to succeed the father. Delicious Documentary
"Jiro Dreams Of Sushi" is a fascinating and enjoyable treatment of a man, a culinary art and a culture all masterfully wrapped up in one great video presentation. You needn't enjoy Sushi or cooking to appreciate this documentary, but you will love it even more if you do. My only criticism is that a movie about a very tradtional Japanese man and a very traditional Japanese culinary art in Japan, a very traditional Japanese place is set to a musical score of Western European music. It would have been so much better if the score was traditional Japanese music.
