Product Information

The authors of the groundbreaking, hugely popular Artisan Bread in Five Minutes a Day presents a cookbook filled with quick and easy recipes for healthy bread that's a perfect gift for beginning bakers. Their first book was called stupendous, genius, and the holy grail of bread making. Now, in their much-anticipated second book, Jeff Hertzberg, M.D., and Zo Fran ois have taken their super-fast method and adapted it for the health-conscious baker, focusing on whole grains and other healthier ingredients. The method is still quick and simple, producing professional-quality results with each warm, fragrant, hearty loaf. In just five minutes a day of active preparation time, you can create delectable, healthy treats such as 100% Whole Wheat Bread, Whole Grain Garlic Knots with Olive Oil and Parsley, Black-and-White Braided Pumpernickel and Rye Loaf, Black Pepper Focaccia, Pumpkin Pie Brioche, Chocolate Tangerine Bars, and a variety of gluten-free breads. About a dozen of the recipes are 100% whole grain. Healthy Bread in Five Minutes a Day will show you that there is time enough for home-baked bread, and that it can be part of a healthy diet. Calling all bread lovers: Whether you are looking for more whole grains, watching your weight, trying to reduce your cholesterol, or just care about what goes into your body, this book is a must-have. Jeff Hertzberg and Zo Fran ois met while taking care of their toddlers at a kids' music class, and co-authored their first book, Artisan Bread in Five Minutes a Day: The Discovery That Revolutionizes Home Baking in 2007. The book became a bestseller, with rave reviews in the New York Times, Associated Press, the Arizona Republic, and other media all over the United States, Canada, and Europe. They've demonstrated their revolutionary stored-dough method on television in San Francisco, Chicago, Minneapolis, Baltimore, Pittsburgh, Atlanta, Tampa, and Phoenix.

Reviews
"Zoe Francois and Jeff Hertzberg have amazingly demystified the arcane and delightful world of Artisan Bread. Now, on the heels of time sensitivity (hello...5 minutes? Really? Yes!) comes a baking book for the health conscious, and it couldn't be more timely. Bottom line, I would crawl across a desert of broken glass to hop into their loaf pan."--Andrew Zimmern, Food Works, Inc., 'Zoë François and Jeff Hertzberg have amazingly demystified the arcane and delightful world of Artisan Bread. • The title prompted me to buy this 2nd book by the authors.

I have not been able to buy Vital Wheat Gluten locally as specified in the bread book for this method of making bread dough. However, this book is a valuable source of recipe ideas for a lot of different breads and I am using those ideas until I can obtain the Wheat Gluten.

  • Healthy Bread in Five Minutes a Day

I bought this book because I so loved the first one that was entitled "Bread in Five Minutes a Day". I like this one as well but since it is healthier bread, it is heavier in spite of following the recipes to a "T". If you like that kind of bread, go for it! But when they say this kind of bread is easy to make, they mean it! I have two girlfriends who always claimed they couldn't make bread until they tried it this way. Now we ALL make our own all the time and rarely purchase a loaf.

  • Healthy Bread in Five Minutes a Day

I already owned Artisan Bread in Five Minutes a Day by the same authors and enjoyed making homemade breads from it. This followup book strives to use more whole grain flours and healthier additives using the same no knead process. I have tried several recipes with good results. The breads tend to be a bit denser when using a greater % of whole grain flours instead of all purpose flour. And some of the introductory info is repetition from the first book. I would recommend it for anyone who enjoyed their first book or anyone interested in making/eating more whole grain breads.

  • This one is a keeper

As a life long baker who is losing the strength to knead and knead my bread I find this book priceless. I has a master bread recipe that you store in the fridge for up to 2 weeks allowing you to grab a handful or the whole thing and make bread at your leisure. This is perfect for the old who would love to bake bread but lost their strength. It is great for the new bride/groom just starting out. It is good far anyone inbetween that may not realize they can make any bread like the pros. For those (like me) who like to make bread by measuring grams dthe have a section that explains weight, and volume. This it the second book these authors have written I believe it is best since it dabbles in other flours, whole wheat, spelt etc. The other book is mainly white bread. This is a keeper for ...

  • Great book

This book is very well laid out. It gives very thorough instructions on how to make healthy artisan bread and it isn't time consuming! I have a large family that loves bread but I don't have a lot of time to spare with homeschooling the children. Someone told me about this book and I immediately went to Amazon and bought it. After making some bread once and seeing how easy it was, I showed my 14 year old daughter how to do it. She wasn't interested before when I showed her how to make bread, but this way she likes! It has a website that you can go to if you have any questions about bread baking which would be very helpful to anyone who is not adept at bread baking yet. The only drawback I can see is having a large container in the refrigerator most of the time which can be frustrating ...
