I feel like a BORN AGAIN cook ...what a delight !

Being of French ancestory I was well aware of the slow cooking methods my Mom used while I was growing up . I learned much from her, but never quite understood the principles behind 'braising' food. Reading this book gave me a whole new insight ! The author doesnt just give you recipes, she explains the 'science' behind why it cooks the way it does. After becoming familar with these ideas and trying out some of the dishes in the book, I became brave and started creating my own culinary masterpieces...to the delight of my family. One of my favorite cookbooks!

Simply one of the best cookbooks, period! There isn't a bad recipe in the book, they have all been winners. Ms. Stevens gives so much practical information about not just the braising techniques, but also cookware, cuts of meats etc. Easy to see why it won an award when first published, I not only use this book often, I have given it as a gift many times over.Lire l'avis complet...
